Northamptonshire - spit roastRecently, our team were asked to cater for an outdoor barbecue celebrating Richie’s 70th birthday party. An explorer at heart, Richie has always loved the great outdoors and loathed being stuck inside whenever he’s attended events. He wanted to feel free at his BBQ, and wanted somewhere with wide open spaces so the grandkids could play.

The barbecue hosted over 200 guests, which had a choice of three mains to choose from – the succulent BBQ Pork Butt; the tender Texan 24hr Beef Brisket; or the fall off-the-bone Louisiana Sticky Pork Ribs. Vegetarians had the option of a Grilled Vegetables and Halloumi wrap with a creamy Tzatziki sauce. For sides we had the zingy, Cajun spiced sweet potato wedges, the seasonal leaf salad, buttery corn cobbettes and the American classic – Mac and Cheese. Who says you can’t have variety at a barbecue?

Our team arrived promptly, hours before the guests so they could set up their catering gazebo, organise the serving tables and most importantly – roast the hog! When the food was piping hot, we called for service and the guests flocked. The Texan Beef Brisket, had everyone’s mouth watering. Despite many people coming up for seconds, we still had plenty to go round.

At the end of the day, when our guests were fed and warmed, we discreetly tidied up after ourselves, and disposed of any waste off site. Richie and his guests were thankful for the wonderful food and service our team at Hog Roast Port St Mary had provided. The autumnal temperatures, were simply no match for us!
