Carlton called us last month to see if we had availability for a large garden party hog roast Colby for around 60 guests. He was concerned as some of the guests had dietary requirements but we could certainly cater for them without any issues, with gluten-free and vegetarian options. Our hog roast Colby is suitable for gluten-free meat-eaters, but we can provide gluten-free bread rolls so those guests can still enjoy our lovely pigs in buns. Plus we have all kinds of vegetarian alternatives on offer and Carlton was happy to order a homemade quiche. Additionally, we would provide some nice salad dishes including green leaf, coleslaw and potato salad, which we always prepare fresh on the day at the venue itself.
I arrived at the venue in the morning, ready to roast the hog for several hours, to then serve the food late afternoon. The rest of the team would arrive later. I set up the gazebo, serving table and hog roast machine and prepared the pig for cooking. A pig this size needs to be cooked slowly but surely, about an hour per 10kg. The rest of the team arrived as it was roasting away and we got to work with the rest of the food preparation, knowing that our fresh, quality ingredients would satisfy the hungry hordes once it was time to serve.
